Job Description
Duties include/Key responsibilities:
1. Control all aspects of daily kitchen operations and lead the Kitchen Brigade in the absence of the Head Chef.
2. Ensure all food preparation and service meet the established standards.
3. Regular inspections of kitchen and food prep areas.
4. Maintain strict control over all food items issued from the kitchen.
5. Ensure orders are prepared according to instructions and checklists.
6. Adhere to portion control, monitor wastage, and follow up on issues.
7. Manage food storage, stock rotation, and security.
8. Verify deliveries against documentation for quality and quantity.
9. Assist in maintaining food cost within budget.
10. Promote communication between kitchen and other hotel departments.
11. Comply with health and safety regulations and food hygiene standards.
12. Wear appropriate protective clothing and report any equipment issues.
13. Report accidents and participate in training sessions.
14. Perform other reasonable management requests.
Qualifications and Person Specification
* Flexible and proactive attitude.
* Experience in a busy food operation within the last 2 years.
* Thorough understanding of H&S regulations and food hygiene policies.
* Ability to build rapport with management and team members.
* Enthusiasm for menu planning and working with fresh ingredients.
Education and Experience
* Experience in a similar environment.
* NVQ in a culinary qualification.
* HACCP and COSHH certifications.
* Knowledge of banqueting operations.
Personal Qualities
* Enthusiasm and passion for food.
* Punctuality and reliability.
* Self-motivated and dedicated.
Additional Information
40-hour contract
Up to £28,000 annual salary
