Join us at SCHLOSS Roxburghe, a luxury estate steeped in elegance and charm, where we are seeking a passionate and experienced Food & Beverage Operations Manager.

The F&B Operations Manager will be responsible for the day-to-day running of the F&B operation within the hotel and will work closely with the wider F&B management team and kitchen team to ensure a seamless service of sequence. They will support the Director of Food & Beverage by contributing to developing and introducing new sales strategies to drive additional revenues and results while analysing data and measuring the success of each.

Your Key Daily Responsibilities:

* To oversee the daily F&B operations at SCHLOSS Roxburghe, including Charlie’s Restaurant, Sunlaws Restaurant, State Room Lounge, Bar 1745, the Spike Bar and events and banqueting.
* You are responsible for the welcome and personal care of the guests, ensuring a consistent luxury and personalised guest experience.
* To ensure consistency in quality of service provided in all restaurants and bars meets the minimum standards of the hotel and reach of F&B KPI’s.
* Maintain a strong presence on the floor during key service periods to support teams and interact with guests.
* You will champion and lead a guest-centric culture, ensuring personalised and memorable service at every touchpoint.
* Monitor Medallia scores based on key performance indicators and respond to guest feedback through various channels, initiating changes and implement action plans to make improvements accordingly.
* Work collaboratively with other departments to enhance the total guest experience.
* Review and communicate required information from daily reports and shared emails to ensure all F&B team members are kept informed of events and important information from around the hotel.
* You will manage guest recovery situations promptly and effectively.
* You will keep up to date on the volume of business, respond to daily changes and prepare rotas and holiday plans to ensure the F&B team is positioned accordingly.
* Attends daily morning briefings when required and shares information with department heads on F&B activities and previous days business.
* Ensures strict compliance of cleanliness audits of all restaurants and bars and personal hygiene standards for all food handlers.
* Implement, maintain and amend where appropriate all SOP’s in line with company brand standards and outlet requirements.
* Supports the F&B Manager with planning future business strategies and reviews ongoing action plan progress.
* Monitors productivity performance as shown in monthly productivity reports and reviews with appropriate department heads.
* Meet regularly with key suppliers to ensure maximum service, e.g. with direct discussion of whatever quality flaws in the product. Maximizes discounts, sponsorships and takes advantage of special offers.
* Obtains all information available for upcoming year (occupancy, forecast, trends, reservations, festive periods, etc.)
* Takeover of manager on duty (MOD) responsibilities, when necessary to represent the management and assist with guest situations.

FINANCIAL & COST CONTROL

* Monitor food, beverage, and labour costs daily and ensure targets are met without compromising quality.
* Controls casual labour and overtime submitted by Outlet Managers.
* You will oversee cash handling and cash up procedures, ensuring that any queries are rectified with accounts in a timely manner.
* Ensures proper and adequate controls are in place specifically over purchase orders and requisitions.
* You will be responsible for the management of assets and goods within the restaurants and bars.
* Monitors outlet par stocks to ensure we fall into line Vs COS Bev %.
* Conduct a detailed analysis of monthly beverage cost(s) and produce action plan(s) to align with budgeted forecast %.
* To ensure that purchasing, receiving and all storage are efficiently handled and that the goods purchased conform to the company’s specification.
* Review and analyse monthly P&L statement with Director of Finance and Food & Beverage Manager.
* Reviews food and beverage cost analysis on a daily/weekly basis to ensure costs are in line with budgeted and forecasted figures.

TEAM & LEADERSHIP:

* You will provide day to day leadership to the team, by leading, inspiring and motivating the team to deliver excellent customer service and exceed in their roles.
* You will take overall responsibility for recruitment of the team and support the outlet managers with team member on boarding procedures.
* You will support the wider F&B Management team in the discipline and people management of the team members, ensuring all colleague probation periods, annual performance reviews and succession development plans are completed in a timely manner.
* Drive a culture of accountability, development, and engagement.
* Work with the Training and QA Manager to ensure regular and comprehensive training programmes are implemented and completed for the F&B team; including mandatory compliance training, product and menu knowledge and guest service training.
* You will ensure regular refresher training of HACCP, COSHH, risk assessments, young worker risk assessments and fire procedures.
* Ensures that the appropriate standards of conduct, dress, hygiene, uniform and appearance are maintained of all colleagues within department.
* Give regular feedback, recognition, and reviews to your F&B management team.
* You will oversee with the operational rotas, scheduling, time keeping, attendance and holiday plans for the department according to forecasted occupancies and payroll costs.

Your Knowledge & Capabilities:

* You have a passion for food & beverage and delivering exceptional guest service.
* You have excellent communication skills, both verbal and written and the ability to communicate effectively with people at all levels.
* You are an energetic and enthusiastic individual who possesses a positive personality with the ability to build genuine and trusting relationships at all levels.
* You have proven organisational and leadership qualities.
* You are resilient and flexible to adapt your work schedule to the demands of the business.
* You are confident in handling guest complaints.
* You have proven experience with colleague management.
* You use your initiative and take a practical approach to problem solving.
* You are confident with completing administrative tasks and are proficient in Microsoft Office.
* Ability to present creative and innovative ideas to enhance the customer experience.

Proven Experience/Qualifications:

* Proven experience of 3+ years of management essential, preferably within the luxury hospitality sector
* Previous high-volume experience and banqueting is essential.
* Strong leadership and motivational people skills.
* Familiar with management software, like ResDiary, Opera, Micros (Oracle).
* Acute financial management skills.
* Ability to work under pressure.
* In-depth knowledge in wine, spirits and cocktails, preferably a WSET qualification 2 or above.
