As Sous Chef, you'll play a pivotal role in supporting the Head Chef in the day-to-day running of the kitchen, helping to uphold the exceptional culinary standards that have made Sale e Pepe a London institution. The Role As Sous Chef, you will work closely with the Head Chef to ensure smooth kitchen operations, exceptional food quality, and strong team leadership. You will support the development of seasonal menus, uphold high standards of cleanliness and compliance, and help train and inspire the next generation of chefs. Key Responsibilities Assist the Head Chef in leading daily kitchen operations with efficiency and discipline. Ensure consistency and excellence across all dishes and service periods. Oversee mise en place and service flow to maintain smooth execution. Support team training and mentoring, fostering a collaborative and high-performance environment. Maintain rigorous food hygiene and health & safety standards (HACCP). Manage stock levels and support ordering processes to minimise waste. Contribute to menu development, bringing fresh ideas rooted in Italian culinary tradition. Requirements Proven experience as a Sous Chef or strong Senior Chef de Partie in a high-quality kitchen. Deep understanding and passion for authentic Italian cuisine. Strong leadership skills and a hands-on approach to team management. Excellent time management and organisational abilities. Commitment to maintaining the highest standards of food safety and kitchen discipline. Flexibility to work evenings, weekends, and holidays as required. Right to work in the UK.
