Job Description
We are hiring a hands-on Operations Manager to lead exciting venues in Central London combining a high-volume bars and a brand-new premium cocktail bar.
You will have real authority to help shape the next phase of the business: rebuilding structure, raising standards, hiring and developing great people, improving systems, and helping launch a premium cocktail bar with genuine award ambition.
We are looking for someone who is floor-led, commercially sharp, highly organised, and excited by using modern tech, reporting, and AI-driven tools to improve service, guest experience, and profitability.
The upcoming new cocktail bar is the first of several planned launches over the next two years, so we are looking for someone who wants to grow with the business.
You will be expected to:
* Help lead the launch of the new premium cocktail bar, including recruitment, training, standards, and opening rhythm
* drive performance at the rooftop bar, improving service speed, team coordination, and guest satisfaction during busy periods
* rebuild and strengthen management structure, culture, and accountability across the business
* create and implement SOPs, training manuals, checklists, playbooks, and systems that scale
* optimise tech and reporting across service, labour, stock, rotas, and admin
* improve profitability through stronger controls, better labour deployment, and smarter operational decision-making
* work closely with ownership to build a business known for both strong volume performance and premium hospitality standards
You should have:
* high confidence using tech platforms, dashboards, and modern tools to run smarter venues
* proven GM or senior operations leadership experience in busy London hospitality venues
* strong launch experience, whether opening a new site or relaunching an existing concept
* the ability to lead from the front and build a high-performance culture without ego
* experience improving speed, flow, and standards in high-volume service environments
* strong commercial understanding across labour, margins, stock control, and operational efficiency
* high standards in service, training, and guest journey, especially within premium bar environments
* strong communication and organisational skills, with the ability to turn ideas into repeatable systems
