Head Chef – The Berkeley Arms, Bosham

Join the award-winning Fuller's Village & Country Pub of the Year team

The Berkeley Arms is a much-loved traditional pub in the heart of the beautiful harbour village of Bosham. We pride ourselves on serving classic pub food with a focus on fresh, seasonal produce and trusted local suppliers. Alongside our main menu, we offer a frequently changing specials board to showcase creativity and trial new dishes.

Being a busy tourist area, we cater for up to 500 covers per week in peak summer. While this reduces off peak, I have been the Tennent in the pub for over 11 years and have built up a loyal local following to ensure year-round trade.

Working Hours

We currently serve food:

* Monday – Saturday: 12–2:30pm & 6–9pm (no Tuesday evening service)
* Sunday: 12–4pm

The role is based on an average 40-hour working week with two days off, including weekend and evening shifts. Days off are negotiable, and there may be opportunities to expand weekend food service in the future.

Responsibilities

As Head Chef, you'll lead the kitchen and ensure smooth day-to-day operations, including:

* Maintaining HACCP and allergen records.
* Managing kitchen cleanliness and hygiene standards.
* Stock ordering, stock control, and minimising wastage.
* Menu planning, costing, and reviews to maintain GP.
* Showcasing seasonal and local produce in dishes.
* Supervising, training, and mentoring the kitchen team.
* Working closely with front of house on menus, allergens, service, and customer experience.
* Negotiating with suppliers to ensure value and quality.
* Upholding all health & safety standards.

You will be responsible for the kitchen team (including sous chefs and kitchen porters) and report directly to the bar manager and licensee.

Essential Qualifications & Experience

* Food Hygiene Level 2 (minimum).
* At least 1 year of experience running a cook-to-order kitchen.
* Previous supervision of a small team.
* Ability to work under pressure while maintaining high standards.
* Strong teamwork and self-motivation.

Desirable:

* Food Hygiene Level 3.
* First Aid qualification.
* Previous customer service experience.
