Your role as Kitchen Manager
This position is the most prominent and important role in the kitchen. A Kitchen Manager is the person who ensures that kitchen departments run smoothly and ensures that all kitchen and restaurant staff adhere to safety regulations. Their duties include supervising kitchen staff, organising food orders, overseeing food preparation, cooking and checking food plating and temperatures.
* Ensuring that all food items and products are stored, prepared and served in line with co standards
* Preparation and portioning dishes to specs
* Maintaining adequate inventory levels and conducting weekly stock takes
* Setting a very high bar through example for impeccable personal hygiene, high work and safety standards including food hygiene and due diligence procedures.
* Scheduling rotas to manage labour control
* Responsibly seizing control of situations or problems that may arise at any moment and calmly applying the relevant action to address any issue.
* Managing underperforming staff members as well as providing incentives for staff members to go above and beyond the expectations of their particular chef roles.
* Outside of the kitchen, take responsibility for, or effectively delegate the kitchen due diligence procedures
What we are looking for:
