The Role:
As Head Sommelier, you will curate and manage an exceptional wine list, showcasing Italian regions and complementing our seafood-focused menu. You'll lead the wine service team, inspire guest experiences through expert pairing, and play a key role in the restaurant's prestige and profitability.
Key Responsibilities:
* Develop and maintain a comprehensive wine list focused on Italian coastal regions and fine international selections.
* Deliver tableside wine service, offering expert pairings and personalised guest recommendations.
* Lead, train, and mentor a small team of sommeliers and FOH staff on wine knowledge and service.
* Manage inventory, supplier relationships, and wine cellar operations.
* Drive wine sales and support overall beverage profitability.
What We're Looking For:
* Previous experience as Head Sommelier or Assistant Head Sommelier in a fine dining restaurant.
* Deep knowledge of Italian wines, global wine regions and fine dining service.
* WSET Level 3 or equivalent qualification is highly desirable.
* Passionate communicator and educator with a guest-first mindset.
* Strong organisational skills and attention to detail.
