The Role The Lloyd opens this summer in Shifnal under Chef Director Laura Kimber. The menu is considered, and the standard is high. We are looking for a Sous Chef who is ready to take genuine ownership of that kitchen alongside Laura not just to execute, but to lead.
This is a founding position. You will help shape the kitchen culture, the prep discipline, and the service standards from day one. The person we appoint will be Lauras most important hire.
What the Role Involves Working directly with Laura, you will share responsibility for every aspect of kitchen operations from prep discipline and section management to service leadership and menu development. In Lauras absence, the kitchen is yours.
Supporting Laura in all areas of kitchen management prep, service, and close
Leading the brigade confidently when Laura is off the pass
Driving prep standards across both the ground floor cook kitchen and the basement prep and patisserie sections
Mentoring and developing the CDP team
Contributing actively to menu development as the seasons change
Maintaining food safety, hygiene, and storage standards across the kitchen
This is an evenings-led operation the working day starts in the afternoon and finishes after service.
What We Are Looking For You will have worked at Sous Chef level or be a strong CDP ready to make that step in a kitchen that took its food seriously. You will be organised, self-driven, and the kind of cook who raises the standard of everyone around them simply by being present.
Experience in rosette-level, fine dining, or ambitious independent restaurant kitchens is strongly preferred. What matters equally is attitude the willingness to graft, to take pride, and to build something from the ground up.
