About Us:
Newhall Mains is a Michelin Key hotel situated in the heart of the Scottish Highlands. The premises consist of a series of luxury cottages and suites. With its own private airfield, restaurant, whisky bar and unrivalled approach to detail, we are hoping to build out one of the leading hospitality businesses in the region.
The Role:
We are looking for a strong Chef De Partie to join our kitchen. As a small team you will have the chance to learn a whole range of skills and techniques whilst helping on all aspects of the menu. From whole animal butchery, fresh pasta, pastry skills and lots more. We have a strong focus around producing as much as we can at the hotel.
We are a family-run business, which takes pride in using locally-sourced produce, and we are looking for someone who can build on this ethos. We are fortunate enough to have access to a wonderful selection of local ingredients including lobster, scallops, venison and locally-reared beef, so a passion for fresh food and an ability to learn high end dining is a must.
The Ideal Candidate:
Proven experience in a fine dining restaurant. You'll be creative, ambitious, willing to learn, passionate and driven with a strong eye for detail. You'll be able to adapt quickly and cope under high pressure in an environment where attention to detail is key.
Key Responsibilities
Assisting in food preparation and maintaining kitchen standards.
Cooking and preparing vegetables, meats, fish and pastry.
Helping with deliveries and restocking.
Assisting with stock rotation.
Helping maintain kitchen and food safety standards.
What we can offer you:
£30,000 plus tronc.
Guaranteed 45hrs per week.
28x days annual holiday (pro-rated) that includes service charge.
