The team behind Molinari’s is looking for a passionate and experienced Head Chef (Sous Chef) for Zocca Cucina Italiano, our new concept in Dedham Square. The ideal candidate will thrive in a fast-paced, high-volume upscale casual environment, a dedicated professional able to lead a team with culinary professionalism and enthusiasm fitting one of Boston’s established concepts.
What you will do:
1. First and foremost, manage all aspects of the kitchen operations. Working closely to ensure that the full scope of the culinary program is executed to the standards set.
2. Supervise the kitchen staff; delegating tasks, providing guidance as needed, and ensuring efficiency.
3. Manage and control inventory on a daily, weekly and monthly schedule.
4. Build on fostering a professional, collaborative environment. Working alongside the management team for continuous improvement to execute top level hospitality.
Who we are looking for:
5. 3+ years kitchen experience, with previous experience as a Sous a plus
6. Knowledge of Italian cuisine always a plus
7. Ability to retain composure and decorum in high-pressure circumstances
8. Excellent organizational and time-management skills, ability to follow instruction and take initiative where needed
Detail of Responsibilities (included but not limited to):
9. Implement & maintain the standards instilled throughout the concepts
10. Oversee and instill the maintenance/continuity of food safety management in adherence with health dept requirements
11. Active role in QC and eye on integrity for all plated items that leave the kitchen
12. Train and supervise the BOH team, as well as motivate them to succeed
13. Participate in effective and respectful communication with all levels of management and FOH team, continuously demonstrating a positive and welcoming environment
14. This is a hands on chef position
