We are looking for an experienced baker to join the team at Browns of Brockley.
We have run a speciality coffee shop in Brockley since 2009 and have opened two further shops in the past six years. In 2022 we opened our production bakery in Forest Hill, producing sourdough bread, viennoiserie, cakes, cookies, bagels and savouries for our cafés.
Quality and consistency are central to what we do, and the bakery works closely with the owner and shop teams to produce food that matches the standards of our coffee and hospitality.
The Role
Full-time position within a small team of multi-skilled bakers producing roughly 1000 sourdough loaves and 2500 laminated pastries per week, alongside cakes, cookies, bagels and specials. The role involves moving between different parts of production to keep the bake running smoothly.
Typical responsibilities include:
Maintaining sourdough levain and dough production
Laminating and preparing viennoiserie
Managing fermentation and retarding
Baking using deck and fan ovens
Consistent attention to detail in weighing mixes, filling in paperwork and packing orders for morning deliveries
Assisting with stock control and ordering
Maintaining excellent hygiene and food safety standards
Early bake shifts currently begin solo for the first few hours, starting 4am MondayThursday and 3am FridaySunday. Other production shifts begin at 67am .
Experience Required
Minimum 2 years experience in a professional bakery, with the ability to work across bread, pastry and general bakery production including mixing, shaping, laminating and baking. Strong written and verbal communication are essential. A food safety level 2 certificate would be an advantage but we can provide this.
Hours
Full time 40 hours per week
Bake shifts generally maximum two per week
Bakery operates 7 days, so flexibility is required
Early starts mean the role will suit someone who lives locally and can commute reliably at these times .
What We Offer
Salary starts at £34,000 rising to £36,000 depending on performance.

We are a small team with a strong interest in good food, coffee and hospitality. We work closely as a team and try to cook and eat lunch together everyday. We also prioritise using UK-grown and milled flour and are continuing to develop this side of the bakery.
