At Malmaison, forty percent of all revenue comes from catering sales. In many of our hotels, we can be busier in our brasseries than most local restaurants! This provides our chef teams with excellent opportunities to develop their skills within our kitchens, working in fast-paced environments, under pressure, and sometimes with produce they haven't worked with before.
We offer on-the-job training in-house as well as nationally recognized apprenticeships through our training provider. If you want to progress your career, a Mal kitchen is the place to do it. Over 50% of our Head Chefs have been promoted from within, with some starting as kitchen porters.
As a Sous Chef, you will support the Head Chef by ensuring the team delivers brand standards smoothly and consistently. Ideally, you will have experience at this level and be able to demonstrate your skills in developing your team.
