About The Role
Fortnum and Mason are seeking a skilled and experienced Chef de Partie to join their team. The Chef de Partie operates under the general guidance and supervision of the Head Chef, the kitchen team member will assist in the preparation and service of all sections in the Kitchen.
Key Accountabilities:
1. Coach and develop Demi Chefs and Commis Chefs to ensure their skills are being enhanced, leading by example
2. Working with the Head Chef and the kitchen team to maintain high standards in the quality of food both as to its preparation and its presentation
3. Setting out, maintain and monitor high standards of cooking and presentation
4. Dealing with deliveries and stock rotation
5. Assisting with ensuring that all Health & Safety procedures are adhered to and properly recorded; this includes temperature checks, cleanliness, and hygiene
6. Working with the Senior Team to ensure the food is delivered to the highest standard in the section of responsibility
7. Check the Section for standards regularly ensuring that all audits and temperature checks are completed
8. Take ownership of the stocktake and feedback any key indicators to the Head chef
9. Pre-empt any pinch points within the kitchen, and highlight them to your line manager
10. Work closely with the Restaurant team to ensure a collaborative partnership between front and back of house
11. Communicate effectively ensuring that the teams are aware of the menu
12. Demonstrate high levels of planning, organising, and time management to drive the operational execution across the section
13. Ensure adherence to company policies, controls and standards (e.g. due diligence, cleanliness, and HSE)
14. Monitor and maintain inventory, ensuring these are highlighted to the Senior Chefs
About You
The ideal candidate for this role will have experience in working in a busy kitchen environment. In addition, you will have the following skills and experience:
15. Excellent time-management skills and the ability and willingness to multi-task
16. Gravitas and credibility at all levels
17. Good attention to detail that will be evident through food presentation
18. Ability to perform duties effectively with minimum supervision and guidance
19. Will to learn and grow
20. Have excellent longevity with your past employers
21. Maintaining Food Safety standard
