General Manager – Nightcap (Edinburgh)
£40,000 salary + £5,000 Year 1 completion bonus
Full-time, 48 hours per week
Nightcap is Edinburgh's true late-night cocktail bar, serving until 3am. It's a challenging venue to run - and deliberately so. We're about to embark on a bit of a refurbishment that will almost double our capacity and add a second bar, and we need a General Manager who can handle the pressure, lead from the front, and keep Nightcap at the top of its game.
This is not just another GM role. You'll have the chance to take creative ownership of a one-year cocktail menu, shaping both the offer and the culture. If you already have a vision for a menu you'd love to bring to life, we want to hear it - you'll have the backing of our marketing team and in-house graphic designer to help make it happen. You'll also work closely with our bottleshop and trade arm, Nip's, hosting events and connecting the bar to the wider Tiny Cup Collective.
What we need from you
* A visible, hands-on leader who thrives on the floor until 3am, keeping standards high under pressure.
* A motivator who can recruit, train, and inspire a team while holding them accountable.
* A commercially sharp operator with proven ability to manage budgets, GP, labour and compliance.
* Excellent cocktail knowledge, with creativity to build a menu and the patience to teach it.
* Energy, resilience, and consistency - this is not a role for passengers.
The package
* Year 1: £40,000 salary + one-off £5,000 completion bonus.
* 9-month review: a formal review of performance and fit, with the option to renew for a further 12-month contract.
* Year 2 (if renewed): £40,000 salary + monthly bonus of 1% of turnover (subject to performance targets).
* Up to 40 days holiday, 28 days as standard, with up to 12 extra days available through performance.
