Key Responsibilities
Production & Prep Leadership
6. Plan and manage weekly prep around the function diary and breakfast cover
7. Lead production for 2–3 weekly functions (approx. 20 covers each)
8. Maintain clear prep lists, labelling, date coding, and stock rotation
9. Control waste through accurate portioning and disciplined ordering
Event Delivery
10. Support menu design and costing for functions and private dining
11. Run functions confidently from prep through to service
12. Ensure consistent presentation, timing, and quality
13. Maintain strict allergen and dietary protocols
Breakfast Cover
14. Deliver breakfast service on the breakfast chef’s days off
15. Maintain pace, consistency, and agreed breakfast standards
16. Contribute to improving breakfast prep and mise en place
Standards & Compliance
17. Own day‑to‑day food safety including HACCP, logs, cleaning schedules, and temperature checks
18. Maintain allergen systems and compliant labelling
19. Uphold a clean, organised, audit‑ready kitchen at all times
Ordering & Cost Control
20. Support ordering and stock management based on functions and occupancy
21. Protect GP through costing, portion control, and monitoring waste
22. Assist with supplier relationships and product selection where appropriate
Teamwork & Communication
23. Act as a steady, senior presence in a small, supportive team
24. Train and support the breakfast chef and casual staff
25. Communicate clearly with front of house on timings, dietary needs, and last‑minute changes
26. Work with a solutions‑focused, calm approach
