Role Description
What is the job? To assist the Head Chef in ensuring that preparation, food production and food service are carried out to the highest standard and in accordance with the food hygiene regulations.

Your day to day
* Deliver first class service to the guest.
* Production of all items, with the correct recipe card and procedure, correct quantity and of good quality.
* To show full support to senior staff, the goals and ideals of the operation, working continually towards the betterment of our customer expectations.
* Checking mis-en-place on quality and quantity.
* Manage the front of house service delivery.
* Provide direct supervision of shift staff including maintaining discipline, personal hygiene and appearance of staff in line with relevant policy.
* To maintain hygiene and sanitation.
* To control the wastage and the costs of their section, and to meet budget specifications.
* Portion control.
* Storage of food and provisions.
* Raw material quality check.
* Allocate duties to commis chefs.
* Work with executive head chef to develop menus and innovate new dishes.
* In the absence of executive head chef ensuring timely and quality service according to service specifications and customer expectations.

Skills and Qualifications
Required Criteria
* Level 2 Diploma in Cooking
* Health and Safety and food hygiene Level one
* A minimum 2 year experience
* Flexibility to work shifts including evenings, weekends and public holidays subject to rota
* Advanced food hygiene
* Good understanding of all applicable Health and Safety legislation
Desired Criteria
* Level 3 Diploma in Cooking
* Excellent spoken communication skills to produce clear and concise communications to staff at all levels
* Excellent planning, organisational and time management skills
* Ability to work unsupervised, use own initiative and prioritise tasks
* An ability to delegate appropriately
* Strong administration and customer service skills
* Knowledge of stock control
* Good understanding of COSHH regulations
