Midnight Pizza Cru is seeking a talented and dedicated Sous Chef to join our team in Sunderland. This pivotal role supports the Head Chef in all kitchen operations, ensuring the delivery of high-quality Detroit Style Pizza, a range of interesting side dishes and a seamless service. Key Responsibilities
Culinary Execution & Quality Control
* Assist the Head Chef in the day-to-day operation of the kitchen, including dough preparation, cooking, and plating.
* Ensure all dishes are prepared to the highest standard of quality, consistency, and presentation.
* Monitor and manage food quality, portion control, and waste reduction.
Kitchen Management & Leadership
* Take full charge of the kitchen operation in the Head Chef's absence, including managing the team and service flow.
* Supervise, train, and mentor junior kitchen staff, fostering a positive and efficient working environment.
* Ensure all kitchen equipment is maintained, clean, and in good working order.
Stock and Hygiene
* Oversee inventory management, including ordering, receiving, and rotating stock, ensuring optimal freshness and minimizing shortages.
* Conduct daily and weekly checks and ensure strict adherence to all Food Safety and Hygiene standards (e.g., storing food correctly, cleaning schedules).
* Assist with menu development and costing as required by the Head Chef.
Requirements
Essential Skills & Experience
* Experience working in a similar setting.
* Specific experience with bread and/or pizza is highly desirable.
* Excellent knowledge of food safety standards and a valid Level 2 Food Hygiene Certificate (or equivalent).
* Strong organisational, communication, and leadership skills.
* Ability to work under pressure in a fast-paced environment, including evenings and weekends.
