Sous Chef Lyme Regis, Dorset £35,000 per year Permanent Live-in available (£76 per week) A well-established coastal hotel in Lyme Regis is recruiting a Sous Chef to join its professional kitchen brigade. Set within beautiful private gardens and enjoying magnificent views, the hotel offers a warm, welcoming atmosphere with thoughtful service and a strong culinary reputation. The Sous Chef will support the Head Chef in the day-to-day running of the kitchen, oversee the Chef de Partie team, and ensure consistently high standards across service. This role suits an experienced Sous Chef looking to work in a quality-driven, supportive environment. Key Responsibilities: * Deputise for the Head Chef when required * Brief the brigade on daily service requirements * Ensure correct stock levels and quality standards * Maintain discipline and fair treatment across the team * Manage rotas, leave and attendance records * Uphold all hygiene, safety and company procedures * Oversee communication between kitchen and restaurant * Check dishes for quality, presentation and temperature * Support service timing on delicate dishes * Deliver ongoing training and development to junior chefs * Attend training courses and seminars as required Key Requirements: * Proven experience as a Sous Chef within a hotel environment * Background cooking to at least 1 Rosette standard * Stable career progression * Strong leadership and communication skills * Calm and organised under pressure This Sous Chef role offers stability, live-in accommodation, and the opportunity to work in a highly regarded Dorset coastal property.
