The role (what you'll be doing)
* Run your section with pride: prep, cook, plate — to spec, to time, every time.
* Keep quality rock-solid on flavour, consistency, hygiene, and safety.
* Communicate with the pass and work clean so the brigade flows.
* Jump in where needed — we win as a team, not as heroes.
* Own your mise, rotation, and labelling like the organised legend you are.
You, in a nutshell (what we're looking for)
* Proven track record in a professional kitchen (references or a solid CV that shows it).
* Genuine team player who can also hold a section solo under pressure.
* Great time management: tidy station, sharp timing, zero drama.
* Calm, reliable, and solution-focused when service heats up.
* And yes, you're able to cook — seasoning, temperature, consistency — the basics done brilliantly.

How you'll know you're winning
* 30 days: You know the menu, run one section confidently, and your tickets hit time.
* 60 days: You can cover an extra section, train a junior on prep, and your EHO standards are spotless.
* 90 days: You're helping shape specials, spotting efficiencies, and are a go-to when the board fills up.
Hours
Full-time with a mix of weekdays/weekends and some split shifts typical of hotels. We rota fairly and plan ahead.
