experienced Head Sushi Chef to lead the sushi section at our flagship venue in
The City. This is a unique opportunity to bring your expertise in Japanese
cuisine to a vibrant, high-energy restaurant that fuses Mexican spirit with
Japanese elegance.
We're looking for a Head Sushi Chef with strong technical
skills, creative flair, and a deep respect for tradition and precision. You
will be responsible for leading the sushi team, maintaining exceptional quality
standards, and delivering beautifully crafted sushi using the finest
ingredients in a fast-paced environment.
Salary
£35,000 base + £30,000 Tronc + Excess & Card Tips on top.

Key Responsibilities
* Lead
the sushi section, ensuring consistency, precision, and exceptional
presentation.
* Work
with the highest-quality fish and ingredients, maintaining proper storage
and handling.
* Train
and mentor junior sushi chefs, ensuring consistency and adherence to
standards.
* Maintain
full ownership of your section, including hygiene, prep, inventory, and
daily operations.
* Work
closely with the Head Chef and senior kitchen team to deliver on quality
and efficiency.
* Uphold
all food safety and sanitation protocols.
* Contribute
to menu evolution with creativity and respect for Japanese tradition.
* Maintain
a positive and collaborative relationship with both kitchen and
front-of-house teams.

Requirements / Skills
* Proven
experience as a Sushi Chef or Head Sushi Chef, preferably in a
high-volume, high-end restaurant or sushi bar
* Strong
understanding of traditional and contemporary sushi techniques
* Excellent
knife skills
* Meticulous
attention to detail and commitment to excellence
* Full
ownership of your role and section
* Strong
leadership and communication skills
* Good
English communication skills and a willingness to learn
