Our newest restaurant in Covent Garden serves Tel Aviv–inspired Eastern Mediterranean cuisine, fresh, vibrant, top-quality dishes from a brand-new, state-of-the-art kitchen. We hold 2AA Rosettes and run a calm, no-ego brigade where teamwork, learning, and progression matter.
Role: Sous Chef
We're hiring a Sous Chef to lead service alongside the Head Chef, run the pass, and coach the team to consistent rosette standards. You'll balance quality, pace, and standards while helping drive menu development and kitchen operations.
Pay & Hours
* Up to £48,000–£50,000 per year (depending on experience)
* Monthly TRONC top-up
* All overtime paid
* 48 hours per week on a fair, rotating rota
* Staff meals, paid holiday & workplace pension (statutory)
Key Responsibilities — Sous Chef
* Lead sections and the pass as Sous Chef; ensure precise cooking, tasting, and plating
* Coordinate service timing with FOH; keep standards, pace, and communication tight
* Coach and develop CDPs/Commis; deliver on-the-job training and feedback
* Uphold HACCP, allergen, food safety, and H&S; keep a spotless, audit-ready kitchen
* Manage ordering, stock rotation, wastage, and cost control; support GP and margin targets
* Contribute to menu development and specials using bold Eastern Med flavours
* Support rota planning, onboarding, and kitchen admin as needed
What You'll Bring
* Proven Sous Chef (or strong Junior Sous ready to step up) in a quality/rosette kitchen
* Calm leadership on a busy pass; clear communication and high organisational standards
* Great palate and consistency; pride in cleanliness and detail
* Knowledge of Mediterranean flavours (za'atar, sumac, tahini, citrus, live-fire/grill)
* Flexible for evenings/weekends; right to work in the UK
