Burnham Beeches Hotel is a 4 star hotel situated just outside Burnham, in several acres of beautiful gardens. The hotel has multiple food and beverage outlets including a fine dining 2 AA Rosette Restaurant and multiple function spaces.We are looking for an experienced Sous Chef to come on board and work with the head chef to drive forward the standards in the kitchen department.
Duties include:
To support the Head Chef in ensuring the efficient, and effective running of the Kitchen Team.
To deputise for the Head Chef in their absence.
To ensure that the preparation and presentation of the food is of a high standard, and complies with food safety regulations.
To supervise, train and motivate team to achieve company standards, and also to comply with Food and Health & Safety regulations.
To achieve budgeted food gross profit.
To ensure all food is served to the required company standard.
To aid in the planning and implementation of all new menus.
To ensure that all commodities are on site, at appropriate stock levels to service the hotel guest.
To ensure that a high standard of cleanliness is maintained in the kitchen operation.
To strive and anticipate customer needs wherever possible, and to react to these to enhance customer satisfaction.
To ensure that all the team are correctly dressed, that they understand the importance of high personal hygiene standards.
The ideal candidate for the Sous Chef position should:
Be confident in all aspects of food safety and health & safety
Be an excellent team player
Have great attention to detail
Have excellent communication skills
Have the ability to remain calm under pressure
Be experienced in working in a 2 rosette environment preferable
Be experienced in working in a hotel environment preferable
Be experienced in working across all sections of the kitchen and
Previous Sous chef experience preferable
Be creative and bring new ideas to all our menus
