Executive Head Chef

Excel Recruitment are seeking an exceptional Executive Head Chef to lead the culinary operation of our clients luxury hotel in Enniskillen. This is a senior leadership role for an ambitious, creative chef with a proven background in high-end hospitality and the ability to manage a fast-paced, high-volume kitchen to the highest standards.
The Role
As Executive Head Chef, you will have full responsibility for the hotel’s food offering across all outlets, including fine dining, casual dining, events, and banqueting. You will set the culinary vision, inspire your brigade, and ensure an outstanding guest experience at every service.
Chef Key Responsibilities:
1. Lead, manage, and motivate a large kitchen team in a busy, high-volume environment
2. Develop innovative, seasonal menus reflecting luxury standards and local produce
3. Maintain exceptional food quality, consistency, and presentation across all services
4. Oversee kitchen operations, including rotas, recruitment, training, and performance management
5. Manage food costs, stock control, and supplier relationships to achieve budget targets
6. Ensure full compliance with HACCP, food safety, and health & safety regulations
7. Collaborate closely with senior hotel management to deliver the overall brand vision
The Ideal Executive Chef:
8. Proven experience as an Executive Head Chef or Senior Head Chef within luxury hotels or high-end establishments
9. Strong background managing busy kitchens with multiple outlets and large teams
10. A hands-on leader with excellent people management and communication skills
11. Passionate about modern cuisine, quality ingredients, and attention to detail
12. Commercially astute with strong cost control and budgeting experience
13. Calm under pressure, organised, and highly professional
