The Flour Pot Bakery is a family owned independent artisan bakery in Brighton & Hove, specialising in long fermented sourdough, yeasted breads and viennoiserie. We serve our own Flour Pot shops in the city and a growing wholesale customer base that appreciate the best quality hand-crafted products.

Our viennoiserie section is based in our central bakery in Portslade, and is currently focussed on a range including croissants, pain au chocolat, pain raisin, and a selection of vegan and danish pastries. The job outline and requirements as follows:

1. Product Development & Quality Control

* Lead the development, testing, and refinement of Viennoiserie recipes in line with seasonal trends and the brands identity. Maintaining deadlines, great time management and utilising the product workflow document.
* Maintain the highest standards of lamination, flavour, and presentation across all Viennoiserie products.
* Conduct regular product checks to ensure consistency, freshness, and adherence to specification.

2. Production Oversight

* Manage and coordinate daily production schedules to meet retail, wholesale, and event demands.
* Optimise production workflows for efficiency, waste reduction, and dough integrity.
* Uphold strict food safety and hygiene standards, ensuring compliance with all relevant regulations. Checking documentation on a weekly basis to ensure that all of the team are adhering to high standards

3. Team Leadership & Training

* Train, mentor, and inspire a team of Vien chefs, nurturing a culture of continuous improvement and pride in craft.
* Lead the Viennoiserie team in the production of a wide range of high-quality Viennoiserie products, ensuring consistency, flavour, and texture. Always leading by example in maintaining a positive and focused work environment
* Manage rota planning, team meetings, 121s, appraisals, performance reviews, and recruitment in collaboration with senior bakery team and the HR department.
* Assist in the development of staff by providing regular feedback and identifying opportunities for growth and training.

4. Collaboration & Communication

* Work closely with the Head Baker, retail teams, and product developers to align Viennoiserie production with broader business goals.
* Gain feedback from the senior operations team to understand customer preferences and feedback, incorporating insights into menu improvement.
* Work closely with the Director of Operations, Head Baker and Bakery manager to gain insight and feedback from the retail operations, including site visits to see the product produced in store.
* Communicate effectively with all departments within the bakery.

5. Inventory & Equipment Management

* Manage ingredient sourcing and inventory in collaboration with the procurement manager.
* Maintain and ensure proper functioning of lamination and baking equipment.

Experience:

* Proven experience as a Head Vien Chef or a similar role, specialising in Viennoiserie and laminated dough products
* Strong knowledge of traditional and contemporary baking techniques for Viennoiserie items
* Excellent leadership skills with the ability to motivate and manage a team effectively
* Creative and innovative approach to recipe development and product improvement
* Strong organisational skills with the ability to manage multiple tasks and deadlines
* Detail-oriented with a focus on maintaining high standards of quality and consistency
* Excellent communication skills, both verbal and written
* Knowledge of food safety and hygiene regulations and best practices
* Ability to work early mornings, weekends, and holidays as needed
