The Role
We're looking for Head Pastry Chef for an award-winning country house hotel in Hertfordshire. This is an excellent opportunity to work closely with an accomplished Executive Pastry Chef and Executive Chef, who will support with your continued career development and potential onward progression.
Leading a team of 10+ Pastry Chefs, typically working 48-50 hours per week, 5 out of 7 days. As the Head Pastry Chef, you will help to deliver consistently high standards of patisserie mis-en-place and service for the Restaurants, Banqueting, Bar, Room Service and Afternoon Tea.
The Person
A classically trained Head Pastry Chef or Pastry Sous Chef ready for progression, who have gained experience within leading hotels, clubs and event caterers. Everything is made in-house, so you need knowledge of a variety of hot and cold desserts, ice creams, tempered chocolate, and larger scale mis-en-place for events.
A positive leader who will help motivate and mentor a pastry team, whilst promoting the company values. Your organisational skills and attention to detail will be vital in maintaining excellence.
Proficient training in Food Safety, Risk Assessments, Health & Safety and HACCP.
