Overview
We are seeking an experienced, creative, and highly organised Head Chef to lead the kitchen team at Manor House Hotel & Spa, a busy hotel with a thriving wedding and events business. The Head Chef will be responsible for delivering exceptional food quality across weddings, banquets, restaurant service, and private events, ensuring consistency, high standards, and memorable guest experiences.
Key Responsibilities
Operational Leadership
* Lead and manage the kitchen team across all outlets, including weddings, banqueting, restaurant, bar, afternoon teas, and private dining.
* Develop and deliver high-quality, seasonal menus that showcase creativity while maintaining profitability.
* Oversee all aspects of food production, presentation, and service to ensure exceptional standards are met.
* Work closely with the events and wedding teams to create bespoke menus and tailor offerings to client requirements.
* Ensure smooth kitchen operation for large-scale banquets up to 150 while also delivering excellence in smaller, intimate dining experiences.
Team Management
* Recruit, train, develop, and motivate a strong kitchen brigade.
* Manage rotas, holidays, and labour costs to align with business levels.
* Lead by example with a hands-on approach, maintaining high morale and a positive team culture.
Financial Management
* Manage food costs, GP%, and kitchen budgets effectively.
* Control stock levels, ordering, wastage, and supplier relationships.
* Deliver menus that balance quality, creativity, and profitability.
Compliance & Safety
* Maintain full compliance with all food safety, hygiene, and health & safety regulations.
* Ensure the kitchen achieves and maintains a 5-star food hygiene rating.
Collaboration
* Work closely with the General Manager, Deputy General Manager, and wider hotel team to ensure seamless delivery of weddings and functions.
* Support sales and marketing initiatives by contributing to menu launches, photoshoots, and promotional events.
Skills & Experience Required
* Proven experience as a Head Chef or Senior Sous Chef in a high-volume hotel, weddings, or events environment.
* Strong background in banqueting as well as à la carte service.
* Excellent leadership and team management skills.
* Creative flair with the ability to design menus that impress a wide variety of guests.
* Sound financial acumen with experience managing budgets and achieving GP targets.
* Knowledge of modern food trends and ability to adapt to client requests.
* A commitment to the highest standards of food hygiene and safety.
