CHOP is a meat-led restaurant in Norwich city centre focused on quality cuts, strong flavour and confident grill cookery.
We are looking for a strong Sous Chef ready to step into their first full Head Chef role.
This is a hands-on kitchen where standards, prep discipline and service flow matter. We are building the restaurant carefully and looking for someone who wants real responsibility and input as the business grows.
The Role
48-hour contract. 5 days per week. Currently closed Mondays
You will:
* Lead service confidently at 50–60 covers
* Take ownership of ordering and supplier relationships
* Run weekly stock takes and protect GP
* Cost dishes properly and manage margin
* Develop and refine a meat-led menu alongside the owner
* Maintain standards, prep structure and kitchen organisation
This is both an operational and commercial role. You will work closely with the owner on weekly performance reviews and financials.
What We're Looking For
* Currently a strong Lead Sous Chef or Junior Head Chef
* Confident on the grill and experienced with meat cookery
* Comfortable running busy services
* Organised and calm under pressure
* Commercially aware (keen to develop this skill)
* Ambitious and ready to step up

Salary & Progression
£36,000 – £38,000
Structured progression to £42,000 once agreed trading and GP targets are achieved.
Full participation in tronc system.
