Responsible for up to 60 chefs and 30 kitchen porters. Responsibilities: Deliver the budget requirement as set out by the Club Management Committee and board, food cost, wage costs and all another budget costs attached to the department. Develop a strong team to deliver the business requirement. Work with suppliers in order to improve food cost. Maintain and implement standard operating procedures to ensure a consistent delivery of excellence and positive member experience. Manage through the Back of House Manager/Supervisor all operational and associated production areas to the highest standards of hygiene and cleanliness in accordance with club guidelines and the legal requirement.
