With the ability to turn the best of the season into specials that fly out the kitchen, you'll have a good knowledge of what produced is available throughout the seasons, and the ability to build rapport with local suppliers. You'll have the knowledge and recipes to produce food that customers love and come back time and time again.
Blue Arrow are looking for someone to lead our clients enthusiastic, hard-working and diverse kitchen team. As Head Chef, you'll lead by example and encourage the other chefs to be more organised, work smarter and more efficiently. You'll enjoy leading the team in serving consistently great food to our customers.
As Head Chef you will:
· Oversee all parts of kitchen operations
· Ensure all food is served up in good time
· Ensure food hygiene standards are met by all cooks, including sanitary and food safety guidelines
· Running the pass; communicating orders as they come in, managing tables, plating up food, ensuring dietary requirements and allergies are dealt with and effective communication with managers and front of house staff
· Time and rota management
· Management of an individual/team of kitchen staff
· Training and development of current and new staff
· Menu writing, recipe recording and developing dishes to ensure variety and quality
· Ordering stock, correct storage of stock and control of inventories
· Cost control
· Controlling and directing the food preparation process, guiding cooks on how best to manage their time and stock levels
· Approving and polishing dishes before they reach the customer
· Managing and working closely with other chefs of all levels
· Being responsible for health and safety
· Being responsible for food hygiene practices
· Keep relevant health and safety records for equipment maintenance, food deliveries, storage, cooking and holding, and any on-shift injuries
What We're Looking For
Proven experience as a Head Chef or Senior Sous Chef in a high-quality, fast-paced kitchen.
Passion for world cuisine and innovative menu development.
Strong leadership and communication skills.
A hands-on approach with a focus on consistency, quality, and efficiency.
Knowledge of food cost management and kitchen budgets.
