* Ensure and oversee area setup prior to guests’ arrival, with all necessary mise en place.
* Conduct a comprehensive staff briefing before service, ensuring all staff are in correct uniform.
* Monitor staff working practices to ensure efficiency and adherence to company standards.
* Liaise with the kitchen team to ensure food service timings are met.
* Understand food and beverage packages and menus thoroughly.
* Follow food allergen information and service procedures.
* Ensure bar and floor staff are attentive to guests’ needs, minimizing wait times.
* Maintain fine dining etiquette at all times.
* Ensure all food and beverage products are of the highest standard, well presented, and garnished correctly.
* Oversee the Bar Manager, with knowledge of stock and cellar management.
* Maintain a safe and tidy working environment, reporting any defective equipment.
* Handle customer and staff complaints effectively and efficiently.
* Encourage staff to upsell products and maximize revenue.
* Record guest feedback accurately.
* Monitor wastage and record through the till system.
* Assist with end-of-day banking reconciliation, ensuring PCI compliance.
* Ensure the area is cleaned and stock secured at shift end.
* Comply with all licensing legislation and company policies.
* Recognize and develop staff potential, providing on-the-job training.
* Complete all relevant documentation and procedures.
* Be flexible and adaptable to business demands and requests.
* Follow all health and safety regulations.
* Maintain a friendly yet professional demeanor.
* Pay attention to detail and punctuality.
* Have experience in a fine dining hospitality setting.
