Shepherd Neame is excited to be recruiting for an Apprentice Commis Chef to join our team at The Oak on The Green.
If you haven’t got any previous chef or hospitality experience, don’t worry. As long as you possess some of the qualities outlined below, we can train you and teach you everything else you need to know.
What you’ll do at work
* Food preparation - washing, cutting, portioning as instructed
* Cooking of food and presenting to specification
* Food rotation - maintaining good food hygiene practices
* Equipment preparation and cleaning - ensuring all equipment meets food hygiene and kitchen standards
* Kitchen cleaning - maintaining cleanliness as part of ongoing standards
Previous catering experience is beneficial, but if you don’t have experience, love food, are confident, motivated, and a great team player, we can train you. Our training partners, HIT Training, will guide you through your learning journey. The Commis Chef Academy includes master classes and workshops.
You will spend time with industry experts, sharing ideas and enhancing your understanding of preparation, cooking, flavour profiling, dish composition, and seasonality. Content is derived from industry-recognized qualifications. You will also have a dedicated coach for 1-2-1 sessions and progress reviews with your line manager.
The program involves monthly training at Kent Cookery School, with industry experts to support your development. You will attend workshops that cover key culinary skills and knowledge.

What do we need from you?
* The apprenticeship lasts 12 months, plus up to 3 months for End Point Assessment
* You need to complete at least 6 hours per week of paid off-the-job training
* You should attend training at the Chef Academy approximately every four to six weeks

Potential progression into roles such as Senior Production or Chef De Partie.
