Sous Chef | Central London | New Opening
New premium French brasserie opening in Central London is looking for a Sous Chef. Open to strong Junior Sous Chefs stepping up or experienced Senior Sous Chefs.
This is a high-volume, quality-led restaurant with a focus on modern and traditional French cooking, delivering 200 covers with multiple turns in a fast-paced environment.
The role
You’ll support the Head Chef in leading a large brigade and delivering consistent, high-quality food.
You will:
* Lead the kitchen during service and prep
* Train and develop junior chefs
* Support menu execution and consistency
* Manage stock, ordering and cost control
* Maintain high standards of hygiene and organisation
* Step up to run the kitchen in the Head Chef’s absence
What they’re looking for
* 2–3 years experience at Sous or Junior Sous level
* Background in French or Modern European cuisine
* Strong personality with the ability to lead from the front
* Comfortable in a premium, high-volume environment
* Organised, calm under pressure, and hands-on

* £44,000–£50,000 package
