Production Team Member Main purpose of the job for the Fishmonger in Hayes: Provide support to the Production Team in the day-to-day production in Hayes Middlesex and order requirements of the business. This role is also responsible for ensuring the proper preparation of products and able to they will be able to cut, prepare, package and present fish and shellfish products to the highest of standards. Responsible to:Production Manager Main tasks of the job: Prepare fish including scaling, gutting, filleting, boning, pocketing, canoeing and skinning -MUST HAVE EXPERIENCE! Process fish and shellfish, including portioning, preparing, weighing, packing, labelling and processing for delivery. Handles through manual or mechanical means; the weighing, labelling, packing and stacking of finished product as required Adherence with safe handling and storage requirements from receipt to packaging, including stock rotation, quality assessment, temperature control, and monitoring and avoiding cross-contamination. Check fish for any rejects or defects and act accordingly. Ensure knives and equipment are cleaned and sharpened accordingly. Cleans tools and work surfaces. As a fishmonger you will need to maintain high levels of work performance including attendance, timekeeping, food safety, etc. Promote a culture of high hygiene standards and that all team members maintain it.
