Following a comprehensive refurbishment, the hotel is set to become one of NSW’s premier destinations for food, beverage, accommodation, and events.
About the Role:
We’re on the lookout for an experienced Bar Manager to help launch several new bars & restaurants within our precinct and to oversee the beverage program across all existing F&B outlets within Novotel Sydney Brighton Beach. This role is perfect for a hands-on, forward-thinking leader who can shape and elevate the guest experience through expertly crafted drinks, staff development, and operational excellence.
Key Responsibilities:
Lead and manage beverage operations across all outlets, including bars, restaurants, and conference spaces
Oversee cocktail list development and seasonal beverage menus in line with current trends and guest preferences
Manage supplier relationships, including ordering, stock management, pricing, and negotiating preferred agreements
Deliver engaging staff training and development programs focused on product knowledge, service excellence, and upskilling
Drive bar performance through hands-on leadership, service, and presence across the precinct
Develop and execute promotions, activations, and in-venue events to drive sales and enhance the guest experience
Monitor and manage beverage budgets, cost controls, and financial performance across outlets
Ensure compliance with licensing regulations, stock control procedures, and venue standards
Collaborate with F&B leadership and the wider venue team to deliver exceptional guest experiences
About You:
Proven experience managing multi-outlet beverage operations in a high-volume or premium hospitality environment
Strong cocktail and beverage knowledge with an eye for innovation and quality
Confident in supplier negotiations, stock control, and cost management
Financial acumen with experience managing budgets, cost controls, and profitability
A natural leader who thrives on coaching, training, and developing high-performing teams
Passionate about creating memorable guest experiences through quality drinks and service
Self-motivated, organised, and adaptable in a dynamic hospitality setting
RSA certification (required); WSET qualifications highly regarded
Flexibility to work evenings, weekends, and peak trading periods, especially during opening and early operations
