Job Introduction


Do you love being a chef but hate working split shifts and evenings? Heritage Portfolio is excited to be recruiting a passionate and driven Chef to lead our team in delivering outstanding seasonal dishes with creativity and consistency at the Scottish National Portrait Gallery, where the art doesn’t just hang on the walls, it’s also on your plate!


Reporting directly to the General Manager, you’ll take the lead on all aspects of kitchen operations—from inspiring your team and maintaining impeccable food safety standards to ensuring every dish meets our high-quality expectations and aligns with our brand’s culinary style. You’ll also be responsible for driving menu profitability, supporting the development of new dishes, and maintaining a smooth-running kitchen environment.


This role is perfect for a talented chef who thrives on creativity and compassion! Leading a team of three who will support you in making your mark on the newly refurbished, vibrant, fast-paced Café and Bistro!


The venue accommodates 145 seats split between the café and Bistro, offering an elevated menu for seated dining with a 2-3 course set menu created with fresh ingredients and passion. With the recent expansion of the event business, the successful Chef can expect to grow with this!

What You'll Do:


Planning, developing, and regularly updating seasonal menus, infusing your own creativity to reflect the brand’s culinary identity, sustainability goals, and customer expectations.


Overseeing the day-to-day operations of the kitchen, ensuring a well-organized, efficient, and positive working environment at all times.


Inspiring and leading the kitchen team by fostering a culture of teamwork, continuous improvement, and high performance, while supporting training and development.


Monitoring and maintaining food costs in line with budgets, ensuring effective stock control, portion management, and waste reduction.


Working closely with front-of-house and events teams to ensure seamless service delivery and outstanding guest experiences.


Upholding the highest standards of kitchen hygiene and cleanliness, ensuring compliance with all food safety, health & safety, and HACCP regulations.
