The Opportunity We are launching an exciting new Japanesefood-led pub concept in Hackney that brings together the warmth and familiarity of a classic English pub with the energy, flavours and hospitality of Japanese food and drink.
This is a confidential pre-opening project and a rare chance to join at the very beginning shaping the culture, standards and success of a genuinely original independent venue. The site has strong local heritage, a built-in neighbourhood audience and a clear point of difference within Londons pub scene.
We are looking for a General Manager who wants more than just another job someone excited by the challenge of opening a venue, building a team and creating a destination from day one.
The Role As General Manager, you will lead the business through pre-opening, launch and ongoing operations, working closely with the founders and chef. Youll have real ownership, autonomy and input into how the venue runs, feels and grows.
This is a hands-on role suited to a confident, entrepreneurial hospitality leader who thrives in independent, food-driven environments.
Key Responsibilities Pre-Opening & Launch
Lead all aspects of pre-opening: recruitment, training, SOPs and operational setup
Build and train a strong front-of-house and bar team from scratch
Work with ownership on menus, pricing, GP control, suppliers and systems
Plan and deliver soft launches, friends & family events and opening period
Operations
Oversee day-to-day pub and restaurant operations across food, drink and service
Deliver a relaxed, welcoming pub atmosphere with high food standards
Manage rotas, labour efficiency, stock control and cash handling
Ensure full compliance with licensing, health & safety and food hygiene
Leadership & Culture
Lead from the front with presence on the floor
Develop a positive, professional and motivated team culture
Set clear standards while maintaining warmth and approachability
Commercial & Community
Drive sales and profitability across food, drink and events
Build strong relationships with locals and repeat guests
Support marketing, events, collaborations and community engagement
About You Proven General Manager experience in a food-led pub or quality casual restaurant
Demonstrable pre-opening experience is essential
Strong understanding of both wet- and food-led operations
Commercially savvy with experience managing budgets, GPs and labour
Passionate about independent hospitality and building something meaningful
Interest in Japanese food, drink or culture is a bonus (not essential)
Calm, organised and confident under pressure
