The Sous Chef is a critical role within the culinary team of Shark Club. This role requires expert culinary knowledge, leadership ability, and a deep understanding of kitchen operations to support the Head Chef. The Sous Chef's responsibilities cover a broad spectrum from menu development/execution to staff management and food hygiene regulations adherence.

Role Responsibilities

* Collaborate closely with the Head Chef to develop exciting, innovative menus that maintain the Shark Club's commitment to culinary excellence
* Supervise, manage and train kitchen staff to ensure optimal productivity and excellent food quality
* Maintain strict adherence to food hygiene and health and safety regulations, ensuring that all dishes are prepared to the highest standards
* Closely manage food and labour costs while ensuring adequate supply and quality of ingredients
* Ensure a safe, positive working environment that encourages teamwork and fosters creativity

Qualifications and Skills

* Significant experience in a culinary leadership role, ideally as a Sous Chef, in a busy restaurant or hotel environment
* A culinary education is preferred but not essential
* A True passion for food and cooking
* Superior knowledge of food health and safety regulations
* Excellent leadership and communication skills with the ability to nurture a positive workplace culture
* Ability to work effectively as part of a team and lead by example
* Strong understanding of budget management, food and labour cost controls
