Commis Chef Enniskillen Permanent Salary: Negotiable Gentech Recruitment are delighted to be partnering with our client based in Enniskillen, who are expanding their team and are looking for a Commis Chef Job Purpose To ensure kitchen and related areas are maintained to the standard required by the company and, that customers and guests receive the standard of service they expect by ensuring all duties and communications are conducted promptly, accurately, efficiently and courteously Duties Maintain a safe and secure work environment by maintaining personal hygiene; follow company procedures designed to protect customers, visitors and staff; identify potential security risks and secure all customer and staff areas, storage and security facilities. Maintain levels of food hygiene (5 Scores on the Doors) and health & safety in the workplace. Create and maintain effective working relationships; ensure excellent communication, meet commitments to other members of staff; contribute to a pleasant working environment. Clean food production areas, equipment and utensils include sinks, walls, floors and drains; use the correct methods of waste disposal for food and rubbish; include large equipment steamers, fryers ovens and chemicals required. Cook & chill food including portioning, packing, sealing and labelling; monitor and record temperatures correctly; correct cook chill, stock rotation procedures and maintain accurate records. Carry out storage, food preparation, cooking, service/ presentation of a range of foodstuffs in adherence to the standard recipes and menus. Carry out a range of different styles to food preparation, production and service in line with breakfast, buffets, carveries, snacks (hot & cold), functions, banqueting, a la carte, grill bar needs Carve and serve hot & cold food on buffet/ carvery to customers at e.g. lunch service. Essential: Fluent English speaker Essential skills English language and Maths. Communication skills Customer care skills L2 NVQ Cookery L2 award in Food safety in Catering Desirable: Minimum 1 year work experience of similar 4 * hotel in all areas of food preparation, cooking and service. To be able to prepare, cook & serve dishes. L2 award in H&S @ Work. L3 award in supervising food safety L3 Diploma in Professional Cookery L2 award in the Principles of Customer Service in HLTT.
