The Role
We are seeking a dynamic and experienced Head Chef to lead our kitchen team. Reporting directly to the Hotel Manager, this role is central to delivering a high-quality food offering that delights guests and supports the commercial success of the hotel. The ideal candidate will have a passion for culinary excellence, strong leadership skills, and a deep understanding of kitchen operations and financial management.
Responsibilities include:
* Leading and managing the kitchen operation and team
* Designing innovative, profitable menus aligned with market trends
* Managing Food cost
* Managing payroll in line with budget
* Analysing menu performance and making strategic adjustments
* Overseeing food production, quality, and presentation standards
* Managing food and staffing costs, rotas, and kitchen budgets
* Ensuring high standards of hygiene and health & safety compliance
* Supporting and developing the culinary team through structured training
* Managing departmental HR responsibilities (recruitment, appraisals, return to work, etc.)
* Maintaining strong cross-departmental communication and collaboration
Key Requirements
Essential:
* Proven experience as an Head Chef or senior kitchen leader
* Deep understanding of food cost control, menu planning, and stock management
* Exceptional leadership and team development skills
* Strong attention to detail and a commitment to high standards
* Effective communication and organisational skills
* IT proficiency and familiarity with systems such as Flow, Procure Wizard, and Rota One
* Flexibility to work varied hours, including weekends and holidays
* Knowledge of health and safety, and food hygiene regulations
Desirable:
* Formal culinary qualifications or certifications
* Previous experience in a hotel or branded kitchen environment
