WHAT ARE YOUR MAIN DUTIES?
As Executive Sous Chef, you will be vital in the daily kitchen operations. You will work closely with the Executive Head Chef on menu creation, lead a team of chefs, and focus on the development of junior staff. You must be capable of running the restaurant pass in the absence of the Executive Head Chef, demonstrating a comprehensive understanding of kitchen operations. A guest-focused approach and willingness to go above and beyond are essential to meet high standards.
Your responsibilities include:
* Creating menus aligned with the restaurant's ethos.
* Delivering high-quality dishes using seasonal Scottish ingredients.
* Running the restaurant pass.
* Mentoring and developing junior chefs to meet high standards.
WHAT DO I NEED?
The ideal candidate will have:
* At least 2 years’ experience in a high-volume, quality-focused senior role.
* Strong understanding of classic cookery and seasonal ingredients.
* Experience in sustainable kitchen practices.
* Knowledge of costings, health and safety, and event logistics.
* An unwavering commitment to quality in all kitchen aspects.
