ROLE OVERVIEW:
Brief summary of the role
As the Assistant Kitchen Manager, you support the Kitchen Manager in overseeing the kitchen team and daily operations. Your role is vital in ensuring the kitchen runs smoothly, maintaining high standards of food quality and safety. Your commitment to excellence and ability to motivate and develop team members will help drive the success of our kitchen operations.

SOUS CHEF RESPONSIBILITIES & EXPECTATIONS:
As part of this role, we expect you to:
1. OPERATIONAL/DAY-TO-DAY MANAGEMENT
2. Assist in ensuring compliance with Food Safety, Health & Safety, and Fire regulations, maintaining cleanliness and order in the kitchen.
3. Support the maintenance of food service standards, dish specifications, and quality in collaboration with the Kitchen Manager.
4. Help manage kitchen maintenance, including equipment and cleaning schedules.
5. Supervise the kitchen team on a day-to-day basis, supporting the Kitchen Manager in setting and upholding expectations.
6. Participate in stock control decisions, balancing reduced wastage with availability.
7. Contribute to menu development with the Kitchen Manager and Head of Food
8. PEOPLE MANAGEMENT
9. Support the leadership and inspiration of the team, acting professionally and representing Mettrick values.
10. Help manage and motivate the team to deliver fresh, tasty food in a safe, high-quality manner.
11. Ensure team members adhere to policies, values, and principles.
12. Participate in talent management, including recruitment, development, feedback, and discipline/grievance.
13. Assist in coordinating the weekly rota, holidays, and ensuring accurate payroll submission within budget.
14. Help recruit, develop, and train a kitchen team that consistently delivers to agreed-upon standards.
15. FINANCIAL MANAGEMENT
16. Assist in managing the kitchen's financial performance, including profit and loss, in collaboration with the Kitchen Manager.
17. Support kitchen reporting, including weekly and monthly budgets for sales, wages, outgoings, and the kitchen maintenance budget.
18. STRATEGIC MANAGEMENT
19. Support the implementation and upholding of operational procedures, ensuring efficiency and consistency in kitchen operations.
20. Work closely with the Kitchen Manager and Store Manager to achieve overall business goals, contributing ideas and insights for continuous improvement.
