We are looking for a Head Chef to join us at The Fenwick in Claughton
This role provides the opportunity to become a Chef Partner and will involve the development of our main menu.
Salary: £40,000 per annum, plus profit share / bonus (circa. £10,000 per annum) and gratuities (circa. £5,000 per annum).
Job Description:
1. Development of menu specifications and methods.
2. Work with the MD and Group Chef on the vision for the business and menus.
3. Execution of menu changes, including delivering cook offs, training specifications and methods into the kitchen team.
4. Ensure that food is cooked and presented to the agreed specifications and standards.
5. Determining food inventory needs and responsible management of stock and ordering to maintain an agreed GP.
6. To maintain records relating to food production activities and supplier information as required.
7. To produce and manage allergen information and ensure that this is correct at all times.
8. To ensure Health and Safety and Food Safety Standards are maintained in line with company policy.
9. To set objectives and be responsible for the day to day running of the kitchen.
10. Responsible for the recruitment and selection process to ensure that it effectively meets the needs of the site.
Person specification:
11. Creative talent and ability to develop a menu suited to the business, current and future customer base
12. Strong understanding of the local marketplace to help support the vision of the venue
13. Demonstrable experience in writing recipe specifications and methods
14. Desire to work towards an AA Rosette standard for the menu
15. Experience of working in a smaller, dynamic, and quality focused operation
16. Proven ability of leading and developing a kitchen team
17. Demonstrable experience of managing a kitchen budget and delivering positively against financial targets
18. Ability to appropriately price dishes to maintain agreed margins
19. Demonstrable experience regarding kitchen management and due diligence
