The Role
We are looking for a dedicated and energetic Kitchen Porter (KP) to be the backbone of our kitchen operations. You will play a crucial, non-stop role in maintaining the highest standards of cleanliness, hygiene, and efficiency in a high-volume, live-flame kitchen environment. This position is vital to the success of our culinary team and the smooth running of service, especially given the unique demands of our wood-fired cooking.
Key Responsibilities
Cleaning and Hygiene (Core Duties)
* Washing & Ware-washing: Operate and maintain the industrial dishwasher, ensuring a constant supply of clean crockery, cutlery, and glassware. Hand-wash oversized and fragile items with care.
* Deep Cleaning: Execute daily, weekly, and deep-cleaning schedules for the entire kitchen, including floors, walls, storage areas, and all equipment.
* Waste Management: Efficiently manage all kitchen waste, including general rubbish, recycling, and food waste, ensuring bins are emptied, cleaned, and properly sanitised.
* Storage: Assist with the organisation and rotation of stock, ensuring all supplies are stored hygienically and correctly.
Live Flame/Fire Management & Maintenance
* Ash and Soot Management: Safely and meticulously clean and clear ash, soot, and charcoal from the live flame ovens, grills, and cooking surfaces according to established safety protocols.
* Fuel Handling: Assist with the storage and safe movement of wood, charcoal, and other cooking fuels.
* Equipment Care: Ensure all specific wood-fired cooking equipment (e.g., long-handled tools, fire rakes, specialized grills) are cleaned and maintained to the highest standard.
* Ventilation Cleaning: Assist in the routine cleaning of kitchen hoods and filters to minimise fire risk and maintain air quality.
Kitchen Support
* Prep Assistance: Under instruction from the chefs, assist with basic food preparation tasks such as washing vegetables, peeling, or simple portioning.
* Deliveries: Receive, check, and correctly store all incoming deliveries in a timely manner.
* Teamwork: Communicate effectively with all members of the kitchen and front-of-house teams to ensure service runs smoothly.
Requirements
* Experience: Previous experience as a Kitchen Porter in a busy restaurant is highly desirable. Experience in a live-fire or high-heat environment is a significant advantage.
* Physical Stamina: Ability to stand for long periods, lift heavy items (up to 25kg), and work in a hot, fast-paced kitchen environment.
* Safety Mindset: A strong understanding and adherence to Health & Safety and HACCP (food hygiene) regulations is essential. A meticulous approach to working around live flames and high-temperature surfaces is non-negotiable.
* Work Ethic: Reliable, punctual, highly motivated, and able to work effectively as part of a team under pressure.
* Communication: Basic working English is required.
