The Head Chef role This Head Chef position is hands-on and operational. Youll take ownership of kitchen standards, service delivery, compliance, training and team cultureworking closely with senior management to strengthen consistency, improve performance, and elevate the guest dining experience.
Restaurants & outlets youll oversee As Head Chef, youll manage food delivery across:
The Estate Room our main AA rosette graded restaurant (evening service)
The Wild Brownie Bar relaxed, all-day dining style venue
The Rannoch Larder breakfast service
Plus support for functions/events and peak seasonal trade.
Head Chef responsibilities Lead, motivate and develop the kitchen team across all services and outlets
Drive consistent quality, portion control and presentation
Menu development using seasonal produce with a strong focus on margins and execution
Manage ordering, stock rotation, waste control and GP targets
Ensure full compliance with HACCP, food safety, allergens and cleanliness standards
Plan rotas and manage labour effectively for peak/quiet periods
Work closely with Front of House to ensure smooth service and excellent guest feedback
Support events/functions and adapt production to varying covers and demand
Head Chef requirements Proven experience as a Head Chef (or a strong Sous Chef ready to step up) in a busy hotel/restaurant environment
Confident leading a team in a high-volume or multi-outlet kitchen
Strong knowledge of food safety, HACCP, allergen management and kitchen compliance
Commercially minded: costing, margin control, waste reduction and efficient prep
Calm, organised leadership style with excellent communication both within the team as well as at an interdepartmental level
Passion for quality food and guest experience
Flexibility to work evenings/weekends as required
