This is a key leadership role within our retail & wholesale operation, responsible for overseeing all aspects of the business. The position requires a deep understanding of butchery, meat processing, food safety regulations, and effective management skills.
A. Job Title
Operations Manager, reporting to the owners of the business.
B. Job Summary
The Operations Manager will be responsible for the efficient and profitable operation of the butcher’s business within the meat processing area, retail store and satellite store. The role will oversee all operations, including staff management, meat sourcing, quality control, food safety compliance and customer service.
C. Key responsibilities
1. Staff management & HR
a. Recruit, train and supervise staff, including management, butchers, supervisors and all team members.
b. Set performance expectations, provide feedback, and conduct performance evaluations.
c. Develop and implement training & incentive programs to ensure staff are skilled in all aspects of the business (butchery, food preparation both cooked & raw, orders, front of house & bakery department) and safety procedures.
2. Quality Control
a. Ensure the highest quality standards for all products, including sourcing, handling, processing, and manufacture.
b. Implement quality control measures to minimize waste and maintain product consistency.
c. Conduct regular inspections and audits to monitor quality and adherence to food safety standards.
a. Manage stock levels, including ordering and stocking meat products to meet business demands.
b. Implement stock tracking systems to minimize product losses and control costs.
c. Monitor product expiration dates and ensure proper rotation of stock & traceability.
4. Food safety compliance
a. Ensure compliance with all food safety regulations and standards.
b. Develop and enforce cleaning and safety protocols within the department.
c. Maintain records and documentation related to food safety practices.
5. Cost management
a. Manage suppler product & service costs & retail selling pricing.
b. Identify cost-saving opportunities and implement strategies to improve efficiency.
c. Negotiate with suppliers to secure favourable pricing and terms.
a. Foster a customer-focused environment, providing excellent service and addressing customer concerns.
b. Collaborate with marketing and sales teams to develop promotional strategies and attract customers.
a. Establish and maintain relationships with meat suppliers, negotiating pricing and ensuring the availability of high-quality products.
b. Evaluate supplier performance and make sourcing decisions accordingly.
a. Stay current with industry trends and innovations in meat processing, butchery and bakery
b. Identify opportunities for process improvement and implement best practices to enhance efficiency and product quality.
9. Marketing
a. Effective & coherent marketing strategy & implementation, meeting monthly with external advisors.
b. Stay up to date with marketing trends and innovations.
c. Identify opportunities for improvement and implement best practices to enhance efficiency and effective delivery of marketing strategy
10. Finance
a. Working closely with and taking advice from the office and accounts manager, the CFO and the owners, ensure all aspects of the books and records (from supplier delivery notes to invoices, daily sales recording, banking, use of Autoentry and Sage control and general administration routines) are managed correctly.
b. Review the financial performance of the business daily, weekly, monthly and quarterly with the office and accounts manager and the CFO, reporting to the owners on an ad hoc and regular monthly basis.
11. IT
a. Working closely with the office and accounts manager, the CFO and relevant business advisors, ensure all aspects of IT are managed correctly.
b. Liaise with all external IT advisors as required (Scotweigh etc.)
D. Qualifications required
1. Extensive experience in butchery, meat processing, or a related field, with a strong understanding of meat cuts and processing techniques.
2. Proven leadership and management skills.
3. Knowledge of food safety regulations and best practices.
4. Strong organizational and problem-solving abilities.
5. Excellent communication and interpersonal skills.
6. Budgeting and financial management experience.
7. Ability to work in a fast-paced, physically demanding environment.
