Our Junior Sous Chef will be expected to have a passion for food and the willingness and motivation to learn new skills. To train and inspire the junior team and to be able to delegate and oversee tasks until completion. Working alongside the head chef and sous chef to uphold and progress the current standards and reputation of Socius. You must be energetic and enthusiastic, constantly striving to be better than yesterday.
Duties & Responsibilities
· Preparing and serving foods to Socius standards, ensuring consistency across the menu, challenging preparation/presentation & logistics to keep socius pushing to be better every day
· Taking full control of your designated section, ensuring all is completed in the necessary timeframes at the highest standard.
· Ensuring organisation of the fridges' is upheld, ensuring labelling is completed and food is stored correctly in the correct areas
· To be aware of the standards that the head chef and sous chef have set and ensure these are adhered to in head chef's or sous chef's absence
· Always maintaining cleanliness and upkeep of kitchen and equipment
· Contributing new menu ideas, techniques and processes and training these out to the rest of the team. Working with head chef and sous chef to ensure we are continually progressing the menu, by keeping up to date with new food trends and techniques.
· Implementing process changes on your designated section where applicable and needed
· To ensure the Socius recipe folder is kept up to date
· Dealing with deliveries and stock rotation, checking invoices.
· Taking responsibility of dry stores with chef de partie
· To stick to pre-set budgets from head chef, ensuring portioning/ordering and wastage are all at the correct levels
· Ensure health and safety documentation is completed daily
· Maintain a positive and professional approach with co-workers and customers
· Ensure housekeeping tasks and weekly jobs are completed
· Ensuring the Socius ethos is always adhered to.
