Position Overview
We are seeking a talented and dedicated Sous Chef to join the kitchen brigade of a prestigious 2 AA Rosette restaurant, situated within a 3 Red Star boutique hotel in the heart of the Royal Forest of Dean. The restaurant is known for its refined, seasonal menus and is now ambitiously pushing for 3 AA Rosettes. This is an exceptional opportunity for a driven Sous Chef with a strong fine dining background to work in a creative and quality‑led environment. You'll support the Head Chef in daily operations and have input into menu development, all while helping to uphold the restaurant's longstanding reputation for excellence. The venue features 20 beautifully styled rooms, cottages, and suites. It has earned accolades such as The Good Hotel Guide's Country Hotel of the Year, Sawday's Hotel of the Year, and Taste of the West's Hotel of the Year. Evening service typically covers up to 40 guests, focusing on fresh, local produce.
Responsibilities
* Support the Head Chef in running all aspects of kitchen operations
* Maintain consistency in food quality, presentation, and standards
* Assist with seasonal menu development using locally sourced ingredients
* Lead and motivate junior members of the kitchen team
* Uphold food safety and hygiene regulations at all times
* Manage ordering, stock control, and supplier relationships
* Help drive the kitchen forward as the team pushes for 3 AA Rosettes
Qualifications
* Experience as a Sous Chef or strong Junior Sous Chef in a Rosette‑level kitchen
* Confident, organised, and calm under pressure
* Passionate about seasonal, sustainable, and local produce
* Strong leadership and mentoring abilities
* Keen to contribute to a kitchen focused on quality and progression
* Committed to maintaining high standards and supporting the Head Chef in all areas
