Fallow was founded by three individuals in May 2019, two chefs Jack Croft and William Murray, and career hospitality entrepreneur James Robson. The essence of this combination makes up much of Fallows DNA, where conscious culinary creativity meets hospitality experience and passion. Fallows permanent home in St Jamess market was established in November 2021 and has since attracted a string of awards including both the Marie Claire and GQ sustainable restaurant of the year and the Caterer award for best new restaurant.
As a Butcher at Fallow, you will play a key role in ensuring the highest standards of meat preparation, quality, and presentation across our menus. Working closely with our Head Chef and kitchen team, you will be responsible for cutting, trimming, and preparing meats with precision and care, maintaining consistency, and upholding Fallows commitment to sustainability and innovation.
Key responsibilities:
Prepare, cut, trim, and portion meats to specification, ensuring quality and consistency.
Maintain excellent standards of hygiene, food safety, and storage across all meat sections.
Collaborate with chefs to ensure all cuts meet menu requirements and portion control guidelines.
Monitor and manage stock rotation, minimizing waste and ensuring optimal freshness.
Support with ordering and receiving deliveries according to purchasing and sustainability standards.
Maintain and care for all butchery equipment, ensuring safety and efficiency at all times.
About you:
Proven experience working as a Butcher in a butchery shop, restaurant, or both.
Deep understanding of meat cuts, carcass breakdown, and knife handling.
Passion for quality, sustainability, and ethical sourcing.
Strong attention to detail, consistency, and presentation.
Excellent organizational and time management skills.
