Responsible To: Head of Food Innovation and Development
Key Purpose: The post-holder will be responsible for creating and developing new products for the bakery side of the business.
The Bakery Development Chef will oversee the handover, trials, and first production of bakery products, focusing on quality, consistency, and adherence to specifications.
The Bakery Development Chef will drive product improvement, benchmark products against competitors, and foster innovation. They will train and assist bakery staff to enhance their skills and proficiency. Additionally, they will collaborate with NPD staff to create specifications, providing information on product assembly, cooking, and staging through photos.
Operational Responsibilities:
1. Liaise with the Head of Food, Innovation and Development, Food Innovation Manager, Deli Lites Innovation Chef, Quality, Production, Technical, Purchasing, Finance, Sales, and the C Suite to introduce new products/ranges across Bakery, Chilled, and Frozen categories.
2. Present new ideas and concepts to customers.
3. Conduct product development activities, including concept development, presentation, sign-off, costings, kitchen and pre-production trials, training factory staff, shelf life analysis, product handovers, and launches.
4. Oversee the integration of new products into the bakery, including sourcing raw materials, providing specifications and labels to NPD technologists, and managing product handovers.
5. Ensure product samples sent to customers meet specifications and requirements prior to dispatch.
6. Develop products in line with NPD procedures and customer codes of practice.
7. Ensure product safety by sourcing from qualified suppliers and using safe raw materials.
8. Conduct ongoing quality assessments, including taste testing, specification compliance, and benchmarking.
9. Assist in approving new suppliers by assessing suitability and ensuring allergen safety.
10. Coordinate the transfer of new products from NPD to production, including recipe development, labeling, specifications, training, and post-launch assessments.
11. Monitor existing products to ensure they meet specifications and brand expectations.
12. Stay updated on industry trends to maintain a competitive edge.
13. Promote a safe, clean, secure, and productive working environment.
