Role Overview:
Reporting to the Hotel Operations Manager, you will assist in spearheading the culinary experience for our Amicable Societies & Chambers F&B Brand. You will assist in driving our approach in delivering a high-quality, life-style Restaurant & Bar Food offering. Your main place of work will be Apex Temple Court Hotel, with Cluster responsibilities as directed by the Hotel Operations Manager, or Regional General Manager.
You will be Results driven, and you will work closely with our supply chain partners, in house centralised services, and on property kitchen and front of house teams to continue developing, researching, and implementing appropriate efficiency and quality changes across all service outlets.
You will assist in ensuring Delivery of a sustainable and continuous profit growth across all outlets.
As part of the senior management team, this role will involve operational shift coverage across a seven-day week rota.
As Head Chef, you will, together with your Sous Chef ensure the smooth running of the Kitchen team, building and creating a high performing team, team culture and spirit, and a flair for life-style insta-grammable, storytelling dishes.
Main Responsibilities:
1. Developing a multi skilled culinary team that delivers payroll flexibility with minimal tiers
2. Collaborate with the Food and Beverage Manager to translate annual strategic business plans into considered departmental scorecard targets and associated activity plans
3. Highly visible at key service periods focusing attention to detail on culinary delivery
4. Full ownership of the full in stay and post stay culinary feedback, to address quality gaps
5. Maximising sales and profit while ensuring customer satisfaction at all times.
6. Coaching, training and supporting all Chefs and apprentices to provide consistently high standards, while continually looking to improve. You'll have the talent to build, develop and motivate a team to deliver excellent levels of customer care.
7. Assist in developing and coordinating a community / social calendar of events for team members
8. Delivering regular staff communications on business trading, as directed by the Cluster General Manager
9. Collaborate with the Food and Beverage Manager to translate annual strategic business plans into considered departmental scorecard targets and associated activity plans
10. Daily / weekly payroll and food cost analysis in accordance with forecasted and materialised revenue levels to ensure optimal performance with overspend corrected within the same trading period, and as directed by Management.
